The nose suggested honey-glazed gammon, caramel, fudge and black jack chews (blackcurrant, liquorice), with tarry driftwood heaped on a beach bonfire. With water, the fire died down somewhat (as it does); we got soot, salt, scorched heather and hazelnut. The full-strength palate was a fiery slap in the cheeks; lovely chewy textures with peat smoke, salt and fudge. We also found heather, juniper and peaty compost; definitely one for lovers of the hard Islay stuff. Even with water, the charred wood and burnt electrical wires made it mouth-coating, tongue-roasting, tooth-stripping, palate-punching and raw. This distillery’s whisky was legal during Prohibition.
