On the nose, oak and smoke arm-wrestled on a table spread with scallops, prawns, brown bread, Polish ham, toasted coconut and boiled sweets. The palate started momentarily sweet, before the bovver boy of smoke trampled everything under his Docs. In spite of his antics we found herbs (lovage, rosemary,mint) roasted meat and vanilla ice cream with monkey’s blood. Water brought little change to the nose – plasticine, iced gems and “banana splits in a smoky room”. On the palate, salt, smoke and burnt twigs suggested beach bonfires; finally, pleasantly sweet violet and lavender flavours showed up. The distillery dates from 1779.
