4.130 Heather in a leather satchel

Shy as a pre-dawn flower, the nose only gradually displayed its nature � heather burning on the moor, Manuka honey, cough lozenges, leather satchels and prosciutto. By contrast, the palate was anything but shy, commencing with lavender and heather, turning chewy and spicy, with charcoal embers, beef jerky, tobacco and then a bitter lemon tang at the end. With water, the nose had more fragrant heather flowers, cleaner smoke and menthol cigarettes. The palate, at reduced strength, developed orange peel, and though it stayed long, we thought it lost some complexity and body. From the Orkney distillery that has twin pagodas.
