4.159 Beach bonfire party

This salty, smoky, mineraly nose took us uncomplainingly to a beach bonfire party – sea-shells, rock-pools, seaweed, heather and driftwood for fuel – salted fish, washed down with beer – tobacco and cinder toffee after. The unreduced palate suggested toffee, chocolate and orange – also some smoke, heather, granary bread with anchovy paste and then a long, hot finish. In reduction, the nose was freshly coastal, with grappa, bubble-gum, Edinburgh Rock and fruit salad chews. The palate held intense sweetness, good smoke, some fruity characteristics (pineapple, grape, melon) liquorice and caraway – a powerful dram, not to be taken lightly, from Scotland’s most northerly distillery.

Drinking tip : On the beach would be perfect
