53.139 Captain Pugwash

The nose was of the sea; a fresh seafood platter with lobsters on dry ice, scallops and briny oysters served with Tabasco sauce, horseradish, onions and chillies. A bonfire on the beach released smoke, permeating driftwood sculptures and salt-soaked ropes. The taste was big and powerful, initially of fish, cooked shells and sauce, becoming sooty and ashy into the finish. The reduced nose reminded us of fresh seaweed on salt plains, clams and mussels in their shells, and salt water lilies. The reduced palate rolled along with smoked lobster, cinder toffee and a finale of peaty ice-cream. This distillery is named after the Sound of Islay.
